How to brew pour-over that actually works
Great beans are necessary but not sufficient. The method below is the standard third-wave specialty protocol, scaled to a 250g brew (one large mug or two small cups). It works on V60, Chemex, and Kalita with minor adjustments noted in the next section.
Ratio: 1:16 to 1:17 by weight
For 250g of water, use 15.6g of coffee (1:16) for the default. For very light roasts or high-acid coffees like Kenya AA, drop to 14.7g (1:17) to let sweetness build. Always weigh both. Water temperature: 200°F (195°F for very light)
Water at 200°F extracts the broad band of soluble compounds (acids, sugars, melanoidins) at the rate the method assumes. Common mistakes that ruin even great coffee

- Stale beans: over 4 weeks past roast date is the death zone for pour-over. Beans bloom weakly, channel, and taste cardboardy. Check the bag's roast date, not the sell-by.
- Pre-ground coffee: ground coffee loses 60 percent of its aromatic compounds in the first 15 minutes after grinding. Pre-ground from the store is dead by the time you open the bag. Buy whole bean or don't bother with pour-over.
- Wrong grind size: too coarse produces sour, weak, under-extracted cups (brew time under 2:30). Too fine produces bitter, astringent, choked brews (brew time over 4:00). Time the brew and adjust grind, not pour speed.
- Water temperature too low: water below 195°F under-extracts and tastes sour regardless of grind. Use a thermometer or a variable-temp kettle. Off-boil for 30 seconds gets you to roughly 200°F at sea level.
